Ce sucre est extrait de la betterave sucri\u00e8re. Il contient des cristaux microscopiques, dont le diam\u00e8tre est inf\u00e9rieur \u00e0 un centi\u00e8me de millim\u00e8tre. Chaque cristal est recouvert d\u2019une fine pellicule de sirop de sucres dissous. Cela emp\u00eache les cristaux de s\u2019agglom\u00e9rer et de cr\u00e9er une croute.
